Italian-style pancakes

For pancakes:

5 tablespoons of flour

1 egg

1 pinch of salt

25 cl milk

1 teaspoon of oil
For the garnish:

400 g canned tomatoes

Chives

Oregano

Basil

Pepper

Salt

2 tablespoons olive oil

250 g mozzarella (or gruyère or even St Nectaire)

Preparation: 1 hour
Cooking time: 15 min
Step 1
Prepare the pancake batter: in a bowl mix the flour + salt + egg. Gradually add the milk and then the oil. Let it rest.
Step 2
In a bowl mix the diced tomatoes + pulp + chives + oregano + basil + salt + pepper + spoons of olive oil + 200 g mozzarella cut into cubes.
Step 3
Preheat the oven to 200°C (Th 6).
Step 4
Cook the pancakes.
Step 5
Spread a little sauce on each pancake, roll them up and squeeze them into a lightly oiled dish.
Step 6
Spread the rest of the sauce over the pancakes and the remaining mozzarella (or gruyère).
Step 7
Bake for 10 - 15 minutes until the top is golden brown.
Author's note
You can serve this dish with thin slices of Parma ham! A dish so light that it is even recommended for an evening meal!
