2 cutlets (turkey, chicken, veal...)

Lemon (or a little more depending on taste)

3 tablespoons of olive oil

5 leaves chopped basil

Pepper

Salt



Preparation

Cooking time: 20 min
Step 1
Mix the chopped basil, oil and lemon juice, emulsify well.
Step 2
Place the cutlets in a gratin dish, "coat" them with the marinade.
Step 3
Place in a cool place for at least 30 minutes.
Step 4
Preheat the oven to 180°C (thermostat 6), then bake the cutlets in their dish covered with aluminium foil.
Step 5
Leave to cook for about 20 minutes: when you prick the escalope, the juice that comes out must be transparent.
Author's note
They can be served with quinoa, ratatouille... Lemon juice softens the meat, which remains very soft.... Yummy!
