Mafaldine pasta with basil and squid

Number of people

350 g mafaldine pasta

400 g squid

3 tomatoes

1 bunch of basil

2 cloves of garlic

1 shallot

1/2 glass of white wine

Olive oil



Cayenne pepper (optional)

Parmesan cheese

Cooking time: 20 min
Step 1
Peel and prune the tomatoes.
Step 2
In a dish, crush the garlic cloves with the basil, add the crushed tomatoes, salt and pepper.
Step 3
The preparation makes juice: drain and set aside the juice.
Step 4
Take small frozen or fresh squid, fry them in olive oil for about 3 or 4 min, then drain them.
Step 5
In the pan, put the chopped shallot, then pour in the tomato and basil mixture, sauté for 1 min and add the squid.
Step 6
Check the seasoning and add a touch of cayenne pepper.
Step 7
Take the juice we had reserved at the beginning, add the 1/2 glass of white wine, bring to a boil, turn off the heat and emulsify with olive oil using a mixer or whisk.
Step 8
Put the pasta in boiling salted water for 9 minutes.
Step 9
When the pasta is ready, pour the squid, pasta and emulsion into a bowl, check the seasoning, sprinkle with parmesan shavings, and enjoy.
