4 sheets of brick
2 balls of mozzarella di buffala (buffalo mozzarella)
4 slices of Italian raw ham
3 tablespoons of olive oil
4 basil leaves
Preparation

Step 1
Wash and dry the basil leaves. Cut each ball of mozzarella into 5 slices.
Step 2
On a plate, spread a slice of ham and place two slices of mozzarella in the middle. Fold the ham slice back into a small package.
Step 3
Place a basil leaf on the package.
Step 4
Repeat with the other ham slices.
Step 5
Gently separate a sheet of brig from the others and place it on a new plate. Place a small package of ham+mozzarella in the middle of this sheet.
Step 6
Fold the edges together to form a kind of square wallet.
Step 7
Repeat the operation for the other sheets of brick.
Step 8
Heat the oil in a frying pan over medium heat and gently place the 4 "portfolios" on the side where the dough is folded.
Step 9
Cook for 2 to 3 minutes.
Step 10
The dough will become crispy and golden. Gently turn over with a spatula and cook for another 2 minutes.
Step 11
If the oil gets too hot and the brig sheets turn black, lower the heat. Put the crunchy ones on plates, it's ready to serve!

Ideal for a delicious, consistent starter or served with a few salad leaves, a drizzle of olive oil and balsamic vinegar.
