Pasta salad with grilled vegetables

Pasta salad with grilled vegetables

Number of people

250 g penne

2 peppers

2 tomatoes

1 zucchini

1 eggplant

1 onion

80 g Parmesan cheese

Preparation: 15 min
Cooking time: 20 min
Step 1
Peel the onion and slice it finely. Put the vegetables under water, remove the stalks from the peppers and tomatoes, shell the peppers and then cut all the vegetables into cubes.
Step 2
In a skillet, sauté the onion with 1 tablespoon of olive oil, then add the tomatoes and let simmer 12 min over low heat. Remove this compote and set aside.
Step 3
In the same skillet, sauté the peppers, zucchini and eggplant over high heat with a little olive oil and a little water. Add the compote, salt and pepper and continue cooking for 10 minutes over low heat.
Step 4
Sprinkle with finely chopped basil at the last moment. Cook the pasta and mix it in a bowl with the vegetables. Sprinkle with parmesan cheese.
