100 g pitted green olives, cut into 4 pieces

2 cloves garlic, peeled, degerminated and coarsely cut

2 tablespoons olive oil

1 drizzle of lemon juice

4 basil leaves, chopped

1 tablespoon almond powder

1 pinch of salt

Pepper from the mill

Preparation: 10 min
Step 1
Put all the ingredients, except the almond powder, in the blender bowl and blend until a thick paste is thick: very small pieces of ingredients should remain. Do not mix until the consistency of a foam is reached!
Step 2
Put the dough thus obtained in a ramekin and add the almond powder. Mix well to mix everything together.
Step 3
Can be spread on small slices of bread baguette that you eat while drinking an aperitif.
Author's note
We were served this appetizer in a restaurant in Vaison-la-Romaine and we found it delicious. I did a lot of research to find this recipe without success, I put a "call to gourmets" which remained unanswered... So I just improvised it just now and the result is that it looks exactly like what we ate. Try it, it's delicious!
