Provencal Spätzles

Provencal Spätzles

Number of people

250 g spätzle

2 medium tomatoes

100 g of bacon

100 g tomato puree

30 g green olive

30 g black olives

1 tablespoon olive oil

20 g Parmesan cheese

Spätzles: Cook the spätzles in a large volume of salted water for about 15 min, until they become al dente.

In a skillet, cook the bacon without fat.
Step 4
Cut the tomatoes, green and black olives into small pieces and add them to the bacon.
Step 5
Stir in tomato puree and herbs.
Step 6
Simmer over low heat (add a little water if necessary) for 10 minutes.
Step 7
When the spätzles are cooked, brown them a little bit in a frying pan with olive oil (they become crispy).
Step 8
Then put the spätzles in the pan for about 5 min, so that they can soak up the filling.
Step 9
Serve the spätzles on plates and sprinkle with parmesan cheese.
