Sage, cheese and basil sauce

5 fresh sage leaves or 1 teaspoon of dried sage

2 basil leaves or half a teaspoon of dried basil

1 shallot

3 cl white wine (Bourgogne aligoté)

20 g grated gruyère cheese

40 cl of fresh cream

Butter

Pepper

Salt

Preparation: 5 min
Cooking time: 10 min
Step 1
Wash the leaves, if you use fresh herbs.
Step 2
Chop the shallots.
Step 3
Chop the sage and basil together.
Step 4
In a saucepan, melt 5 gr of butter, brown the shallots and deglaze with white wine.
Step 5
Add the fresh cream and herbs, salt and pepper.
Step 6
Sauté all gently for 4/5 min.
Step 7
Remove the pan from the heat, then add the grated Gruyère cheese.
Step 8
Let stand at least 30 min.
Step 9
Reheat before serving.
Step 10
Ideal with a pasta dish or to accompany white and red meats.
