Salmon with basil and zucchini

Salmon with basil and zucchini

Number of people

4 salmon steaks

200 g fresh tagliatelle

4 zucchini

1 bunch of basil

1 shallot

1 untreated lemon

1 handful of pine nuts

4 tablespoons of fresh cream

5 cl of fish stock

Butter or olive oil



Preparation: 40 min
Cooking time: 30 min
Step 1
Wash and chop the basil. Peel and chop the shallot.
Step 2
Wash and cut the courgettes into tagliatelle using a peeler. Grate the lemon zest.
Step 3
Insert a few basil leaves into the salmon steaks. Season with salt and pepper.
Step 4
Cook the tagliatelle in boiling salted water for a few minutes. Drain and keep warm.
Step 5
Sweat the courgettes in a frying pan in a little olive oil. Season with salt and pepper and set aside.
Step 6
Sweat the shallot in a frying pan with a little oil. Add a little basil, fish stock and reduce. Stir in the cream, adjust the seasoning and keep warm.
Step 7
Toast the pine nuts dry.
Step 8
Fry the salmon steaks in a hot frying pan, about 5 minutes on each side.
Step 9
Serve salmon steaks with tagliatelle and courgettes. Sprinkle with pine nuts and top with basil sauce.
