Scallop crown with orange sauce

Number of people

10 ml butter

15 ml chopped onion

2 cloves of garlic, chopped

60 ml crushed tomatoes

2 ml salt

1 ml pepper

16 cooked scallop nuts
For the orange sauce:

30 ml dry white wine

30 ml white wine vinegar

30 ml orange juice

90 ml 35% cream

2 drops of tabasco (hot sauce)

15 ml chopped fresh basil

30 ml cold butter, cut into pieces
For the service:

12 oranges

4 basil leaves

Preparation: 10 min
Cooking time: 5 min
Step 1
Make the tomato filling: melt the butter in a frying pan. Add the onion and garlic and sweat over low heat for 3 minutes. Add the tomato, salt and pepper and keep warm.
Step 2
Parry the scallops and cut them in half in the direction of thickness.
Step 3
Orange sauce: deglaze the pan with white wine, vinegar and orange juice. Reduce by half.
Step 4
Add the cream, tabasco sauce, basil and simmer for a few minutes (about 10 min). Remove the pan from the heat.
Step 5
Gradually add butter, whisking constantly until a creamy consistency is obtained. Do not put back on the fire.
Step 6
Serving: Cover the bottom of the plate with the orange sauce. Place scallops in a crown shape. Garnish the centre with crushed tomatoes.
