Semolina soup with tomato and basil

Semolina soup with tomato and basil

Number of people

100 g medium seed semolina

1 cube of chicken broth

3 tablespoons of tomato paste

2 cloves of garlic

1 tablespoon paprika

1/2 teaspoon cumin

fresh basil leaf

2 tablespoons olive oil


Preparation: 10 min
Cooking time: 30 min
Step 1
Boil 1.5 litres of water, then add the chicken broth cube, tomato paste, paprika, garlic, cumin, pepper and salt.
Step 2
Boil for a quarter of an hour over medium heat.
Step 3
Pour in the semolina, stir to prevent it from sticking.
Step 4
Cook for 15 minutes.
Step 5
Turn off the heat, put a handful of basil leaves on it, let it steep before serving.
Author's note
Tomato paste can be replaced by tomato coulis. Poultry broth can be removed.
