600 g ground beef or veal meat

3 eggs

200 g pecorino or grated parmesan cheese

100 g breadcrumbs

Basil

Parsley

Mint

1 onion

2 cloves of garlic

Pepper

Salt

Olive oil

Step 1
Peel and finely chop the garlic, onion and herbs. Mix all the ingredients in a bowl.
Step 2
Heat olive oil in a large frying pan.
Step 3
Using a large tablespoon, remove enough stuffing to form a ball in the palm of your left hand (or right if you are left-handed...). Like my grandmother, they will be about 4 cm wide by 6 cm long.

Place them in the pan as you shape them (the heat will have been lowered beforehand to avoid overcooking outside).

Fry on both sides, which will have a light golden appearance at the end of cooking, then with the help of a skimmer remove them from the olive oil and let them drain on absorbent paper before placing them.
