500 g cooked wheat

250 g drained red beans

285 g drained corn

1 red pepper

1 cucumber

Basil

Chives

1 spring onion

1 tablespoon of tomato

1 tablespoon Tex-Mex spices

Olive oil

Pepper

Salt
For the vinaigrette:

3 tablespoons of olive oil

1 teaspoon mustard

1 tablespoon vinegar

Pepper

Salt

Preparation: 10 min
Cooking time: 5 min
Step 1
Heat 3 tablespoons of olive oil in a saucepan.
Step 2
Add tomato paste and Tex-Mex spices.
Step 3
Sauté while stirring constantly (be careful, spices tend to burn very quickly).
Step 4
Pour in 1/2 litre of water and bring to a boil. Salt.
Step 5
Pour the wheat into a bowl. When the liquid boils, pour it over the wheat, stir and wait for it to cool.
Step 6
Dice the cucumber, spring onion (and green stems) and red pepper.
Step 7
Add to wheat, mix well.
Step 8
Prepare a vinaigrette in a bowl to taste. Pour over the salad, mix well.
Step 9
Chop the herbs and sprinkle them over the salad.
Step 10
Put in the fridge until ready to serve.
Author's note
If you like spicy salads, you can double the amount of spices, and add a few drops of tabasco to the vinaigrette.
