Thai Gambas Sautéed with Ginger and Basil

500 g raw gambas

lemon zest

Lemon Lemon

1 clove of garlic

1 handful of basil

3 tablespoons ginger

1/2 teaspoon of chili paste (be careful, 1 teaspoon: it stings!)

2 tablespoons sunflower oil

Salt if necessary
For the sauce:

2 tablespoons rice vinegar (or white vinegar if there is no white vinegar)

1 teaspoon sugar

2 tablespoons soy sauce

Step 1
Shell the prawns while keeping the tail.
Step 2
With a knife, cut the back and remove the veins.
Step 3
Chop the lemon zest, garlic, peeled ginger and basil in a chopper.
Step 4
In a bowl, put the prawns to marinate with the chopped ingredients, chili paste and lemon juice for 3 hours.
Step 5
Heat the oil in a wok and sauté your prawns.
Step 6
When they are cooked, set aside.
Step 7
In the still warm wok, mix the vinegar, sugar and soy sauce for 1 minute.
Step 8
Serve the sauce separately to dip the prawns in.
Author's note
You can serve this dish with Cantonese rice.
