The squares of summer

Number of people

4 fillets of plaice (150 g each)

20 cl lemon juice

10 cl of pastis

4 tablespoons breadcrumbs

8 tomatoes, milled

1 green pepper, finely diced

1 tablespoon semolina garlic



Fresh thyme at will

4 tablespoons of olive oil



Preparation: 15 min
Cooking time: 10 min
Step 1
Cook the fillets of plaice 2 or 3 min in the steam basket of a pressure cooker or in a couscous maker (but there hello the dishes...).
Step 2
Oil the oven pan and store the plaice fillets in it.
Step 3
Drizzle the fish with lemon juice and pastis.
Step 4
Spread the breadcrumbs over the fillets and broil for 2 or 3 minutes.
Step 5
Keep warm.
Step 6
Heat the olive oil in a saucepan and sauté the tomatoes for 4 minutes.
Step 7
Add the finely chopped fresh herbs, semolina garlic and pepper cubes.
Step 8
Season with salt and pepper and continue cooking for another 5-6 min, stirring constantly so that the food does not stick to the bottom of the pan.
Step 9
Place a slice of plaice and a little vegetable fondue on each plate. Serve very hot!!
Step 10
To be served with: mashed potatoes in olive oil

Out of season, use frozen herbs....
