1 kg of courgette

100 g grated parmesan cheese

50 g rice

2 whole eggs

100 g white ham

1 onion

2 cloves of garlic

1 bunch of parsley

1 bunch of basil

Fine breadcrumbs

Olive oil


Preparation

Cooking time: 30 min
Step 1
Peel the courgettes, leaving every other slice. Cut into 4 cm lengths and boil for 5 minutes in salted water.
Step 2
Chop them with a grinder (robot).
Step 3
Cook the rice in salted water for 10 minutes.
Step 4
Chop a whole onion and 2 cloves of garlic, fry them in two tablespoons of olive oil with the ground zucchini for 5 to 10 minutes over low heat so that the water evaporates.
Step 5
Chop the ham, parsley and basil, add the zucchini, the two beaten eggs and the parmesan cheese.
Step 6
Put in a dish, sprinkle with breadcrumbs and pour over a drizzle of olive oil.
Step 7
Bake in the oven at 180°C (Th 6) for 25 to 30 minutes.
Step 8
Eat hot or warm with a good mesclun salad with garlic rubbed croutons.
