3 eggplants

3 zucchini

3 red peppers

3 red onions

6 tomatoes

2 tablespoons olive oil

10 sprigs of fresh thyme

20 Thai basil leaves (optional, but delicious)




Preparation: 30 min
Cooking time: 15 min
Step 1
- Peel and seed the tomatoes, cut them into very small cubes of less than 1cm by 1cm (they will have to melt to make the sauce). Book them.
Step 2
- Wash, peel and cut the auergines into thin strips of 2 cm by 10 cm.
Step 3
- Wash and cut the red peppers into 3 cm x 10 cm strips.
Step 4
- Put the aubergines and peppers to cook SEPARATELY with steam (in the 2 compartments of a steamer ideally, if not in the microwave) for 10 to 15 minutes.
Step 5
- Wash and partially peel the courgettes (with your peeler, alternate a peeled tongue and a tongue with the skin). Cut the courgettes into 1 cm thick slices. Steam them for 5 minutes (separately from other vegetables).
Step 6
- Meanwhile, cut the red onions into thin slices in the height direction (to make slices and not rounds)
Step 7
- In a large frying pan, pour in the 2 tablespoons of olive oil. When the oil is hot, add the red onions.
Step 8
- When the onions are golden (they do not need to be cooked), add the diced tomatoes and thyme sprigs. Cook the onions in the tomato. By cooking in this juice, they will become naturally melting and sweet. Stir regularly.
Step 9
- Meanwhile, collect the peppers, which must be cooked, and gently remove the skin with a small kitchen knife.
Step 10
- When the dice have completely turned into juice, add the aubergines, zucchini and peeled peppers.
Step 11
- Remove from heat and mix well in a large dish.
Step 12
- Season to taste with salt, pepper, Thai basil leaves cut in half, and possibly a little pepper to spice it up.
Step 13
- Serve hot. This ratatouille is even better warmed up.
Author's note
This ratatouille is very different from ratatouilles where vegetables, often very fat, are browned. It's a ratatouille with a good taste of vegetables, healthy, and ULTRA LIGHT! 2 tablespoons of oil for 6 people! It is not dry at all thanks to the tomato juice.
