Zucchini with feta cheese

4 round or long courgettes

4 onions

1 clove of garlic (optional)

1/2 bunch of basil or mint

250 g feta cheese

Olive oil

Pepper

Salt

Preparation: 20 min
Cooking time: 30 min
Step 1
Empty the courgettes. Bake them in the oven (180°C-200°C, thermostat 6-7) with a little olive oil for 30 minutes.
Step 2
Chop the zucchini meat and fry it in a frying pan with onion and olive oil.
Step 3
Let it cool down.
Step 4
Mix the feta and basil (or mint) with the vegetable fondue in the pan.
Step 5
Remove the courgettes from the oven and fill with the warm mixture. Serve immediately.

It's easy and refreshing, excellent summer dish. You can serve them with gourmet cereals.
