Ingredients

4 zucchini
1 can of tomato pulp
200 g smoked bacon
1 onion
2 eggs
20 cl of liquid cream
100 g Parmesan cheese
1 clove garlic, crushed into pulp
1 tablespoon flour
Basil or other herbs of Provence
Olive oil
Pepper
Salt
Preparation
TOTAL TIME: 1 HR

Step 1
Sauté bacon and onions in a frying pan. Preheat your oven to 200°C (thermostat 6-7).
Step 2
Meanwhile, peel the courgettes 1 band out of 2. Cut them in half lengthwise, then cut them in half again to obtain quarters lengthwise. Cut these "stems" into small cubes.
Step 3
Prepare the egg cream by beating the 2 eggs and the liquid cream.
Step 4
In a bowl, combine the zucchini, garlic pulp, tomato pulp, bacon/onions, half of the parmesan cheese, egg cream and basil.
Step 5
Season with salt and pepper.
Step 6
Pour everything into a gratin dish previously oiled with olive oil and sprinkle with the rest of the parmesan cheese.
Step 7
Bake for about 30 minutes.
Author's note
For children, I replace the bacon with mixed ham that blends into the preparation.
