Cantonese rice omelettes

Cantonese rice omelettes

6 eggs

100 g of bacon

50 g Cantonese rice

60 g grated cheese

2 slices hamburger/croque cheese

drop of viandox (sauce)

1 pinch of salt

1 pinch of pepper

1 clove of garlic

basil leaf

3 tablespoons wheat flour

1 teaspoon of srirasha sauce or chili paste

1 teaspoon achari paste

6 tablespoons of rapeseed oil / sesame oil

Step 1
This recipe allows you to recycle the leftover Cantonese Rice, if you have for example eaten Chinese food to take away the day before....
Step 2
Sauté the bacon in a covered saucepan over low heat. Add the viandox, spicy sauce, achari paste and seasonings as you go. Do not hesitate to taste to be sure of the seasoning. However, the taste must remain fairly concentrated since this will be the only time when the seasoning will be added.
Step 3
Once the bacon is cooked, turn off the heat and soak the pan in cold water (in a water bath, at the bottom of the sink for example) to cool the bacon. Add the remaining Cantonese rice and mix well. Pour everything into a bowl and add all the other ingredients (except the cheeses), finishing with the cream and then the flour. Mix well. Finally, add the grated cheese and the two squares of hamburger/croque cheese cut into small pieces - make confetti the size of a nail. Mix one last time.
Step 4
Preheat a small frying pan over medium/high heat. Add a little rapeseed oil or sesame oil (to taste) and pour in a ladle for an omelette. Cook for 2 minutes on one side, same on the other.
Step 5
Enjoy it hot or cold, with a BBQ or spicy sauce.
