Chicken roll with goat cheese

4 chicken cutlets

125 g fresh goat cheese

2 tablespoons of fresh cream (if necessary)

1 bunch of basil

1 bunch of parsley

half lemon

25 cl white wine

1 large tablespoon tomato paste

150 g butter

Preparation: 20 min
Cooking time: 15 min
Step 1
Cut the 4 chicken scallops in the middle, flatten them well with a rolling pin.

Prepare the stuffing: crush the goat, add the chopped herbs and lemon juice.

If the stuffing is too dry, add fresh cream if necessary.

Spread the stuffing on the cutlets and roll them tightly in aluminum foil.

Put them in boiling water for 15 minutes.

Prepare the sauce:

put the shallots finely cut then when they are taken from the color add the white wine.

After all the wine has evaporated, add the butter and tomato paste and serve.

I accompany this dish with rice, pasta or potatoes and decorate it with small basil leaves. This recipe was very much appreciated by the family.
