Corned beef pie, tomatoes, parsley

1 shortcrust pastry (homemade is even better)

1 onion

1 can of crushed tomatoes

1 small bunch of fresh parsley

2 eggs

1 small box of corned beef

100 g grated Gruyère cheese

Herbs of Provence

Oregano

Basil...

1 clove of garlic

Semolina

Pepper

Salt

2 tablespoons olive oil

Cooking time: 30 min
Step 1
Preheat your oven to 220°C (Th 7-8)
Step 2
Chop the onion and sauté in olive oil for 10 minutes without burning it.
Step 3
Mix in a bowl: tomatoes, herbs, eggs, crushed garlic and cooked onion. Season with salt (a little bit because corned beef is already corned) and pepper.
Step 4
Roll out the dough in a suitable dish, prick the bottom and place a little semolina on it, then slice or crumble the corned beef and mix the tomatoes/eggs/herbs made.
Step 5
Cover with grated gruyère cheese.
Step 6
Bake for about 30 minutes at 210°C (thermostat 7).
Author's note
As good hot served with a salad as cold as it is cold as an aperitif.
