500 g zucchini

5 canned anchovy fillets

Olive oil

Seasonal!!! 
3 cloves of garlic

basil leaf

1 jar of fresh cream

Parmesan cheese (optional)


Preparation 
TOTAL TIME: 35 MIN
Preparation: 25 min
Cooking time: 10 min
Step 1
Wash and peel the courgettes but not completely (leave green skin for vitamins and colour). Cut into small cubes.
Step 2
Brown with olive oil. 5 minutes later, add the chopped garlic and anchovy fillets, basil.
Step 3
The courgette cubes must be almost transparent.
Step 4
Mix the mixture with the jar of cream, salt and pepper.
Step 5
Put back in the fire for a few minutes.
Step 6
Serve over pasta (rather short) and with grated Parmesan cheese.
Author's note
It's a southern Italian recipe. Anchovies may make some people hesitate, but I promise that all anti-anchovies love this sauce!
