250 g "farfalle" pasta
2 eggplants
4 spoons of olive oil
Seasonal!!!
Basil and 2 pinches of coriander

Cooking time: 30 min
Step 1
Wash, peel and dice the aubergines.
Step 2
Fry them for 5 minutes in a frying pan with oil, add the coriander, salt, pepper and cook them covered over a low heat for 20 minutes.
Step 3
Cook the pasta "al dente".
Step 4
Put them with the aubergines in the pan for 5 minutes.
Author's note
You can replace coriander with herbs from Provence and it's also good!!!!
