Eggplant snack

Number of people

3 eggplants

2 cloves of garlic

10 dried tomatoes

6 anchovies in salt

1 medium onion

10 basil leaves

30 g Parmesan cheese

Preparation: 15 min
Cooking time: 15 min
Step 1
Peel the aubergines and cut 2 into small 1 cm cubes. Cut the third one into slices about 1 cm thick.
Step 2
Slice the onion, squeeze the garlic and sauté in the olive oil, add the eggplant cubes and cover over low heat to melt, stirring occasionally (about 15 minutes).
Step 3
Meanwhile, brush the remaining eggplant slices with oil and grill them quickly in a very hot pan.
Step 4
Once the eggplant cubes are very soft, add 5 basil leaves, 5 sliced dried tomatoes, parmesan cheese, anchovies and mix everything in a blender to obtain a smooth paste.
Step 5
Just before serving, add the grilled eggplant slices, the rest of the chopped dried tomatoes and basil, and a teaspoon of capers to this purée.
Step 6
Serve chilled as an appetizer.

Also delicious as an aperitif with a few slices of toasted country bread.
