Grilled mutton chops and herb butter

Grilled mutton chops and herb butter

Number of people

4 sheep

80 g butter

1 clove of garlic

sprig of parsley

basil leaf

Rosemary and savory powder

1 pinch of thyme powder

Olive oil

Step 1
Preheat your oven to the grill position.
Step 2
Brush the meat with olive oil on each side, then sprinkle with rosemary, savory and thyme to flavor it.
Step 3
Place the chops on the rack of your oven, remembering to place the drip pan underneath to collect the oil and cooking juice.
Step 4
Cook them for about 3 min on each side, then add salt and pepper to taste.
Step 5
Remove them from the oven as soon as they are cooked, then keep them warm.

Then prepare a herb butter:

Peel and chop the garlic with parsley and basil.
Step 8
Reduce the butter to an ointment, then mix it with the herbs and chopped garlic until the mixture is perfectly homogeneous.
Step 9
Reconstitute it into a ball, then place it in a cool place for 30 minutes to harden it.
Step 10
Serve and enjoy the hot chops, with a dab of herb butter.

You can serve this dish with a mushroom purée.
