4 hake fillets

4 ripe tomatoes

1 onion

4 teaspoons of olive oil

1 carrot

3 tablespoons of liquid tomato paste

Cooking time: 20 min
Step 1
Recipe to prepare in an ovenproof dish garnished with 4 pieces of parchment paper in order to recreate papillotes. Garnish them with hake fillets.
Step 2
Cut the tomatoes coarsely from a bowl, finely slice the onions and carrot. Add the liquid tomato paste, basil, salt and pepper.
Step 3
Preheat the oven for 10 min at 200°C (thermostat 6/7).
Step 4
Place this filling in each papillote with the fish.
Step 5
Pour 1 spoonful of olive oil into each papillote.
Step 6
Bake for 20 to 25 minutes depending on the thickness of the hake fillets.
Step 7
Once the cooking is finished, serve by opening the papillote a little and adding a dash of lemon juice.
Step 8
Serve with baked potatoes or rice.

Other fish can be used: cod, whiting, salmon, tuna...
