Lamb mouse fondant with basil

1 lamb mouse (weight according to appetite)

1 red pepper

1 green pepper

2 tablespoons of oil

Seasonal!!! 
1 small bunch of basil

1 tablespoon tomato paste

2 fresh tomatoes, not peeled and cut into pieces

1 glass of dry white wine

1 l water

Pepper

Salt

Preparation: 10 min
Cooking time: 1 h
Step 1
In a cast iron pan, heat the oil to very gently brown the mouse, which will have been salted, peppered and floured.
Step 2
Meanwhile, prepare the peppers by cutting them into large strips. Add basil, concentrate and chopped tomatoes.
Step 3
Add this last preparation with the mouse in the pan, with the glass of white wine and the litre of water.
Step 4
Slightly adjust the seasoning and cook very gently one hour after the first boil.
Step 5
Serve with fresh pasta lightly flavoured with basil.
