1 detailed chicken in pieces

3 tablespoons of strong mustard

4 tablespoons of pressed lemon or balsamic vinegar

4 tablespoons of olive oil

1 teaspoon of salt

Pepper

Cooking time: 1 h
Step 1
Place the chicken pieces in a large freezer bag.
Step 2
Prepare the vinaigrette with mustard, lemon (or balsamic vinegar), oil, salt, pepper and herbs of your choice.
Step 3
Pour the dressing into the freezer bag and close it tightly, and knead to coat the chicken well with the dressing.
Step 4
Place the bag in the refrigerator (on a plate in case of leakage) for 2 to 12 hours (the longer the better).
Step 5
Remove the chicken from the refrigerator 30 minutes before cooking and preheat the oven to 200°C (thermostat 6-7).
Step 6
Place the chicken in a large gratin dish, skin on top, and discard the remaining marinade. Salt and pepper lightly, and put in the oven for 1 hour.
Step 7
Just before serving, sprinkle the chicken with a little more herb of your choice for colour.
