Mediterranean Muffins

Number of muffins

1 bunch of basil

Dried tomatoes marinated in oil

75 g black olives

200 g flour

100 g polenta

2.5 teaspoons of yeast

2 eggs

9 cl olive oil

350 g buttermilk

30 g pine nuts

Step 1
Preheat the oven to 180°C (thermostat 6).
Step 2
Wash and coarsely chop the basil. Stone and coarsely chop the olives.
Step 3
In a bowl, mix the dry ingredients: flour, polenta, yeast and salt.
Step 4
In another container, mix the eggs well with the olive oil and then the buttermilk.
Step 5
Then add the dry ingredient mixture. Mix well until a homogeneous paste is obtained.
Step 6
Finally, add the basil, tomatoes, olives and pine nuts.
Step 7
Spoon into 12 muffin cups and bake for 20 to 25 minutes.
