Minestrone Pasta Sauce

Minestrone Pasta Sauce

Number of people

800 g cooked pasta (e.g. spaghetti)

100 g leek

100 g carrot

100 g zucchini

75 g celery root

14 g olive oil

80 g bacon or bacon

4 g garlic

40 g of Gruyère cheese

125 g liquid or thick cream

250 g tomato sauce


Preparation: 1 hour
Cooking time: 20 min
Step 1
Wash the vegetables. Cut the peeled carrots, zucchini and celery into very small cubes. Slice the white leeks.
Step 2
Gently cook the vegetables in oil in a casserole dish, stirring frequently.
Step 3
Meanwhile, cook the bacon, chop it with the peeled garlic and basil.
Step 4
After 15 to 20 minutes of cooking, add the tomato sauce, cream and bacon basil and garlic mixture.
Step 5
Heat 2-3 min and put the gruyère at the last minute (which allows to reheat if you make the sauce in advance otherwise with the cheese, it gets sticky).
Step 6
Stir and add the mixture to the pasta.

Cooking time may vary depending on the desired vegetable fondant. We can make the recipe with frozen vegetables, they are pre-cooked so it goes faster.
