Mushroom snacks with grey shrimps and pink radishes

Mushroom snacks with grey shrimps and pink radishes

Number of people

12 firm button mushrooms

500 g grey shrimp in shell

50 g flour

1 lemon

4 basil leaves

4 sprigs of tarragon

8 chives

4 radishes

4 dl of Riesling

2 dl of fresh cream

1 shallot

100 g butter

1 tablespoon olive oil

1 pinch of cayenne pepper

1 pinch of curry powder




Preparation: 30 min
Cooking time: 10 min
Step 1
Mix the flour with the lemon juice and dilute with 75cl of water, whisking constantly.
Step 2
Wash the mushrooms and cook them in this white, keeping them firm, then drain them on a grill.
Step 3
Cut the radishes into wolves' teeth and cook them in white wine and butter and keep them warm.
Step 4
Shell the shrimp and keep the trimmings.
Step 5
Peel and chop the shallot, sauté it in oil and add the shrimp trimmings and sear over high heat, season with cayenne pepper and curry. Wet with the rest of the white wine, the cream and a hint of cognac, then bring it to a boil.
Step 6
Reduce 5m, pass through a fine sieve and keep warm.
Step 7
Remove the mushrooms and stuff them with shrimp, then put them in the hot oven for a few moments.
Step 8
Arrange 3 mushrooms per plate and cover them with the sauce.
Step 9
Decorate radishes and herbs, serve the rest of the sauce separately.
Author's note
the combination of mushrooms and grey shrimps is remarkable, especially with a touch of curry.
