Pasta salad with pine nuts and parmesan

Pasta salad with pine nuts and parmesan

Number of people

600 g pasta (farfalle)

250 g raw ham (slightly thick slices)

250 g cherry tomato

1 good handful of sprockets

100 g Parmesan cheese

1 good handful of basil

2 tablespoons olive oil

2 cloves of garlic

1 dose of saffron (optional)

2 tablespoons balsamic vinegar

Preparation: 30 min
Cooking time: 15 min
Step 1
Cook the pasta in unsalted water with a scoop of saffron to add colour, add two cloves of garlic crushed with the palm of the hand (with their skin).
Step 2
Apart from browning the pine nuts in a frying pan.
Step 3
Remove them and put the raw ham cut into 1 cm by 3 cm slices, always dry, brown.
Step 4
Drain the pasta al dente (turn off the heat 1 min before the indicated cooking time).
Step 5
Put everything in a bowl, cut the garlic into small pieces, add the grated parmesan cheese, coarsely chopped basil, balsamic vinegar, olive oil and pepper. Mix well.
Step 6
Serve warm or cold.
Author's note
The doses of the seasoning can be modified at your convenience. You can replace the parmesan cheese with small mozzarella balls. You can replace the farfalle with penne or tortilli or other.
