1 puff pastry dough

700 g fresh salmon (without skin)

1 egg yolk

1 bunch of basil

40 g Parmesan cheese

3 tablespoons pine nuts

5 tablespoons of olive oil

2 tablespoons lemon juice

Pepper.

Salt

Step 1
1. Preheat the oven to Th.7 (200°C)

2. Prepare the pesto: Chop the pine nuts (lightly toasted) with the parmesan cheese, olive oil, basil and lemon juice. Season with salt and pepper.

3. Prepare the salmon fillet. Roll out the dough in circles on a baking sheet lined with parchment paper. Place the fish on half of the dough, leaving an edge of the dough around it. Make small incisions in the fish. Put the pesto in the incisions, then coat all the fish with pesto. Cover with dough and weld the edges with a little water.

4. Prick the top of the dough with a fork, brush with egg yolk and water with a brush.
