Rabbit with black olives and tomato

Number of people

1 Garenne rabbit

3 tablespoons of olive oil

2 cloves of garlic

2 onions

15 cl dry white wine

2 tablespoons of tomato paste

1 bouquet garni

1 sprig of savory

1 tablespoon chopped basil

1 tablespoon chopped parsley

30 black olives

Cooking time: 50 min
Step 1
Brown the rabbit cut into pieces in hot oil and add the chopped onion and garlic.
Step 2
Remove the rabbit when it is golden brown.
Step 3
Deglaze the pan with the white wine, bring to a boil and return the rabbit to the boil. Add the tomato paste, bouquet garni and savory. Cover and cook over low heat for 30 minutes.
Step 4
Add the olives and continue cooking for 20 minutes. Sprinkle with parsley and basil.
