Ingredients

2 eggs

80 g flour

1/2 sachet of baking powder

4 tablespoons of olive oil

15 g grated gruyère cheese

100 g dried tomato

20 g feta cheese in its natural state

Seasonal!!! 
1 level tablespoon dried basil

Pepper

Salt




Preparation 
TOTAL TIME: 20 MIN
Preparation: 10 min
Cooking time: 10 min
Step 1
Preheat the oven to 240°C (Th 8).
Step 2
Break the eggs, separating the whites and yolks.
Step 3
In a bowl, mix the flour and yeast, then add the egg yolks and mix with a wooden spoon.
Step 4
Apart from that, whisk the egg whites with a fork without raising them and add them to the previous mixture.
Step 5
Pour in the oil and whisk vigorously.
Step 6
Add the gruyère cheese, salt, pepper and mix.
Step 7
Add the diced tomatoes, diced feta cheese and basil.
Step 8
Mix.
Step 9
Pour one tablespoon of the dough into each madeleine cell (buttered and floured if necessary).
Step 10
Put in the middle of the oven at 240°C (Th 8) for 4 minutes then at 180°C (Th 6) for 6 minutes.
Step 11
Check the cooking.
Step 12
Unmould immediately.
Author's note
You can replace the feta cheese with 20 g of mozzarella cheese cut into small cubes. These madeleines can be served with a tomato/basil/garlic salad served with a spicy vinaigrette.
