12 slices of smoked salmon or trout (cheaper)
3 sheets of brick
300 g crab in its natural state
150 g plain fresh cheese
3 shallots
1.5 lemon
1 tablespoon olive oil
1/2 bunch of basil
Parsley
Chives + decoration
Pepper or cayenne pepper

Preparation
Step 1
Plan 6 stainless steel circles (or triangles) of 8cm diameter (or sides).
Step 2
Cut 18 rounds of brick sheets, butter each sheet and place in the oven at 180° for 4 to 5 minutes.
Step 3
Cut 12 salmon rounds, set aside in a cool place.
Step 4
In a bowl, combine drained and shredded crab, chopped salmon falls, cheese, chopped shallots, lemon juice, oil, chopped herbs, salt and pepper.

Make the mille-feuilles with the circles at the last moment to keep the crispness of the brig sheet:
