Tomato cake with mozzarella

8 firm tomatoes

1 scoop of mozzarella cheese

4 gelatin leaves

Seasonal!!! 
1/2 bunch of basil

2 tablespoons olive oil

Pepper

Salt


Preparation

Step 1
Peel the tomatoes, seed them by collecting the juice, cut the flesh into cubes.
Step 2
Cut the mozzarella into cubes of the same size. Chop the basil, keeping a few leaves for decoration. Soften the gelatin in a bowl of cold water, then dissolve it in the tomato juice collected and warmed.
Step 3
Mix the tomato flesh, mozzarella, basil and gelatin. Season with salt and pepper.
Step 4
Garnish with individual moulds and refrigerate for 3 hours.
Step 5
Unmould and drizzle with olive oil. Garnish with basil leaves and serve with toasted bread and tapenade.
