5 sheets of filo pastry

2 red tomatoes

1 yellow tomato

1 green tomato

1 sprig of cherry tomato (or 1 tray)

200 g fresh goat cheese

Seasonal!!! 
basil leaf

Herbs of Provence

Preparation: 20 min
Cooking time: 30 min
Step 1
Preheat the oven to 200°C (thermostat 6-7).
Step 2
On a baking paper-covered baking sheet, place a sheet of filo pastry, brush with oil and cover a second filo pastry. Repeat the operation with the 5 sheets.
Step 3
Mix the fresh cheese with salt, pepper and chives.
Step 4
Spread the mixture on the filo pastry, leaving a light edge.
Step 5
Wash the tomatoes and remove the core and cut them into slices.
Step 6
Arrange the tomato slices on the dough, alternating colours.
Step 7
Season with salt, pepper and herbs of Provence.
Step 8
Bake for 30 minutes.
Step 9
Place a few basil leaves on the pie before serving.
