1 cucumber

2 handfuls of medium semolina

Black olives

Vinegar

Basil

Garlic

Olive oil



Preparation 
TOTAL TIME: 2 H
Preparation: 2 hrs
Step 1
Peel the cucumber halfway (1 out of 2 slices) and grate it coarsely.
Step 2
Salt copiously so that the cucumber returns its water and add the raw semolina, it will swell and "cook" with the cucumber juice!
Step 3
Mix and let stand in the fridge for 1 to 2 hours.
Step 4
Stone (cheaper) and cut the black olives into small pieces, or put them in a rapido blender.
Step 5
Add a little vinegar, black olives, chopped basil, minced garlic and olive oil.

Simple, fresh and delicious. With grilled meats, it's perfect!
