500 g of beef

25 cl coconut milk

100 g pistachio nuts

1 fresh ginger

1 small red pepper

4 sprigs fresh coriander

4 sprigs Thai basil

3 tablespoons of red curry paste

1 tablespoon nuoc mam sauce

1 drizzle of peanut oil

1 drizzle of sesame oil

Salt

Pepper

Cooking time: 30 min
Step 1
Peel the ginger and chop it finely to obtain about 2 tablespoons of diced ginger.
Step 2
Wash the coriander and basil thoroughly and remove the leaves.
Step 3
Set aside a few beautiful leaves for decoration and chop the rest finely
Step 4
Wash the chilli pepper. Cut the tail, remove the seeds and cut finely.
Step 5
Place beef, chopped ginger, chilli and herbs in blender bowl.
Step 6
Mix to obtain a smooth and thin paste.
Step 7
Season with salt and pepper.
Step 8
With this dough, make small balls about 4 cm in diameter.
Step 9
Pour a dash of peanut oil and sesame seeds into a wok or large skillet.
Step 10
Heat this oil mixture and fry the meatballs for about 10 minutes.
Step 11
Place them on absorbent paper and set aside.
Step 12
Place the curry paste in a frying pan and melt it with the coconut milk, stirring carefully.
Step 13
Then add the crushed pistachios and 1 tablespoon of nuoc mam sauce. Stir to obtain a homogeneous mixture over low heat.
Step 14
Once hot, add the meatballs and cook for another 5 minutes.

Serve hot and garnish with the reserved herbs.
