Bites of red peppers goat cheese and basil

Number of people
For pickled peppers:

2 peppers

Medium Lemon

2 cloves of garlic

4 spoons of olive oil
For the garnish:

1 fresh goat cheese (it should be easy to spread)

2 sprigs of basil

Pickled peppers:

Bake whole peppers on a 7-8 thermostat in the oven until the skin is a little dark and they start to swell (about 30 minutes).

Remove the peppers from the oven and place them in a closed plastic bag (this facilitates "peeling").

Meanwhile, prepare a marinade in a casserole dish:

Lemon juice + oil + garlic finely chopped.

Remove the skin from the peppers and cut them into strips of about 3-4 cm.

Marinate for about 2 hours with the lemon (the peppers must be very tender).

For the garnish:

Remove the strips from the marinade.

Spread the goat cheese (thin layer) on the inside, place a basil leaf on top.

You can also spread Saint-Moret or a cheese of this type that is very easy to spread. In a colorful plate it is very nice for an aperitif.
