Carpaccio of kiwi gold and lamb

Number of people

2 kiwis gold (can be made with classic kiwis)

100 g lamb meat

parmesan cheese chip

For the vinaigrette:

1 teaspoon mustard

2 teaspoons barley syrup

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon balsamic vinegar


Preparation: 20 min
Step 1
Cut the unpeeled gold kiwi into thin slices of ± 2 mm.
Step 2
Slice the lamb meat very thinly. To obtain ultra-thin slices, the slices must be wrapped in fresh film and flattened with a pie roller.
Step 3
Make the vinaigrette by mixing all the ingredients.
Step 4
Place the lamb slices and kiwi gold slices on the plate.
Step 5
Drizzle with vinaigrette and decorate with basil leaves and parmesan shavings.
Author's note
Try it with ordinary kiwis. The kiwi gold looks like the ordinary kiwi, but its shape is somewhat different, it is ovoid with a small tip. Its taste is a mixture of peach, mango and melon with a hint of lemon.
