Carrots, zucchini and sweet potato in my own way

15 very fresh carrots (or 4 normal carrots)

1 sweet potato

1 ripe tomato

1 clove of garlic

Oregano

Basil

1 zucchini

Turmeric

Ginger

Thai sauce (optional)



Preparation 
TOTAL TIME: 25 MIN
Preparation: 10 min
Cooking time: 15 min
Step 1
Boil some water.
Step 2
Peel the vegetables. You can keep 1cm of carrot leaves if they are young.
Step 3
Cut the sweet potato into thick strips.
Step 4
Cook the potato and carrots whole (or cut into pieces if they are large) in water until tender (about 10 minutes).
Step 5
In a sauté pan, fry the chopped tomato, minced garlic and zucchini in olive oil cut into thick slices. Add basil or oregano. Cover.
Step 6
When the zucchini is melting, add the carrots and sweet potato. Add the spices if you wish (1 large pinch of each).
Step 7
Sauté for 3 minutes. Season with salt and pepper.
Step 8
Serve alone or with fish or grilled white meat accompanied by a little Thai sauce.
