Celery mousse with star anise

Number of people

1 stalk celery

3 star anise

1 sachet of mashed potatoes

Sea salt

Pepper from the mill

4 basil leaves (for decoration)

Preparation: 30 min
Cooking time: 20 min
Step 1
Cut a celery stalk into small pieces.
Step 2
Cook it for 20 minutes in a pan of boiling salted water with sea salt (just enough water to cover the celery).
Step 3
After 10 minutes, add 3 star anise stars.
Step 4
At the end of cooking, remove the pan from the heat, remove the aniseed stars and add a sachet of powdered puree (or flakes).
Step 5
Put in a blender (for soup) to make a foamy purée.
Step 6
Serve by filling a ring.
Step 7
Decorate with a basil leaf.
Step 8
This recipe is a side dish (meat or fish).
