Chicken and Vegetable Pasta from the Sun

Number of people

1 eggplant

1 zucchini

3 chicken cutlets, minced

2 cloves of garlic

300 g pasta (orechiettes...)

300 g tomato sauce (homemade if possible)

basil leaf



Parmesan cheese (optional)

Preparation: 10 min
Cooking time: 30 min
Step 1
In an oiled frying pan, fry the diced eggplant and zucchini and chopped garlic.
Step 2
Add the minced chicken and sauté for a few minutes.
Step 3
Add the tomato sauce and simmer for about 20 minutes. Add the basil a little before the end of cooking. If the sauce is too liquid, let it evaporate a little.
Step 4
Meanwhile, cook the pasta.
Step 5
When they are cooked, add them to the mixture, mix and cook for another 5 minutes.
Step 6
When ready to serve, sprinkle with parmesan cheese chips.

It is a quick to make, and balanced dish (vegetables, starches & meat, with almost no fat!).
