Clafoutis of snails, garlic and basil

20 canned snails

6 button mushrooms

16 tomatoes pigeon heart tomatoes

2 cloves of garlic

2 eggs

30 cl whole liquid cream

30 g flour

1 small bunch of basil

50 g butter

Pepper

Salt

Cooking time: 25 min
Step 1
Preheat the oven to 180°C (Th 6).
Step 2
Peel the tomatoes, cut them in half.
Step 3
In a frying pan, heat 30 g of butter, add the chopped mushrooms, snails and chopped garlic.
Step 4
Season with salt and pepper.
Step 5
Sauté for 5 minutes. Divide the mixture among 4 small buttered dishes.
Step 6
Beat the eggs with the cream and flour.
Step 7
Add the chopped basil, salt and pepper.
Step 8
Pour into the dishes. Bake for 20 minutes.
Author's note
Basil can be replaced by fresh coriander (Chinese parsley)
