1 bouquet of courgette flowers

300 g flour

2 eggs

2 tablespoons olive oil






1/2 sachet of baking powder
For the liquid:

Milk (or beer or sparkling water)

Frying oil

Preparation: 15 min
Cooking time: 3 min
Step 1
Gently wash the courgette flowers, it is not necessary to remove the pistil, remove the tail and small prickly branches around the flower.
Step 2
Set the flowers aside on absorbent paper.
Step 3
Put the flour in a bowl, add the salt, pepper, yeast, egg yolks and 2 tablespoons of olive oil.
Step 4
Chop the parsley, garlic and basil and add them to the mixture. Salt the egg whites and beat them until stiff. Gently mix them into the dough. Add the liquid to obtain a paste.
Step 5
Let the dough rest for a good hour. Heat the oil. Soak the flowers one by one in the dough and plunge them into the hot frying pan. Cook 2 to 3 minutes on each side.
Step 6
Drain on absorbent paper.
Step 7
The paste can be used for thin slices of aubergine previously salted and sprinkled with paprika or chilli pepper. You can also put thin slices of blanched courgettes in boiling water for 5 minutes.
