1.5 kg of courgette

2 onions

130 g dry bread

4 eggs

1 bunch of basil

Cooking time: 1h30
Step 1
Peel and thinly slice the courgettes and onion.
Step 2
Cook the vegetables without browning them on a low heat in a frying pan in a little olive oil for 20 minutes.
Step 3
Purée the flesh of the vegetables with a fork.
Step 4
Reduce the bread crumb soaked in milk to a kind of porridge and blend it in a blender.
Step 5
In a bowl, combine the eggs and basil. Season with salt and pepper.
Step 6
Add the mixed bread crumbs, crushed vegetables.
Step 7
Grease a terrine mould, place the preparation in it and place in the oven for 1 h 30 to 150°C (thermostat 5).
Step 8
After cooling, store in the refrigerator.
Step 9
After a night's rest, remove the terrine from the pan and sprinkle with basil leaves.

Serve with a tomato fondue.
