2 kg of carrot

1 bunch of fresh chives

10 cl coffee cream

Meat broth

Sweet curry

1 pinch of chilli powder knife

Pepper

Salt

Garlic
For croutons: buy them ready-made or:

slice of toasted bread

Olive oil

1 clove of garlic

Basil

Pepper

Salt

Cooking time: 30 min
Step 1
Peel the carrots and cut them into evenly sized pieces.
Step 2
Cook them in lightly salted boiling water for about 15-20 min, until they are tender (Carrots should just be covered with water).
Step 3
When the vegetables are tender enough to mix or crush, remove most of the water. Leave only one bottom.
Step 4
Mix everything together while continuously adjusting the seasoning: add as much broth, chives, curry, garlic, a little chilli pepper to spice up the taste.
Step 5
Cook again (low heat) if necessary to evaporate excess liquid. After adding a little light cream, the whole thing must have a fairly firm consistency.
Step 6
Allow to cool for 10 minutes. This dish can be eaten hot or cold.

Homemade croutons:

Rub the bread slices with a clove of garlic cut in half,

Sprinkle them with a little olive oil, cut the slices into small cubes, spread them on an ovenproof baking sheet and sprinkle them with salt, pepper and basil. Put them in the medium preheated oven (100°C) for 10 minutes.
Step 10
Serve the carrot cream in bowls with garlic croutons and chives.

This carrot cream is also very appreciated as an accompaniment to grilled meats.
